Scallion Cheddar Mini Quiches
|Baking mix||1 Teaspoon (Atkins Quick Quisine)|
|Cheddar cheese/Gruyere cheese||1 Ounce, grated to make 1/4 cup|
|Scallion||1 , thinly sliced to make 1 tablespoon|
|Dried onion flakes||1 Teaspoon|
|Heavy cream||3 Tablespoon|
1. Heat oven to 350°F. Butter two 6-ounce custard cups.
2. Put 1/2 teaspoon bake mix in each cup. Top with cheese, scallion, and onion flakes.
3. Whisk eggs, cream, and salt in a bowl. Gently pour over cheese mixture. Bake until a knife inserted in a quiche comes out clean, 20 to 25 minutes. Serve immediately, as the quiches fall quickly.
