Quick and Easy Quiche
|Polyunsaturated margarine||1⁄2 Ounce, melted (15 Gram)|
|Whole grain bread slices||8 , crusts removed|
|For vegetable filling|
|Broccoli||5 Ounce, cut into florets (155 Gram)|
|Canned sweet corn kernels||4 Ounce, drained (125 Gram)|
|Button mushrooms||4 Ounce, sliced (125 Gram)|
|Red pepper||1⁄2 , chopped|
|Eggs||4 , lightly beaten|
|Skim milk||6 Fluid Ounce (3/4 Cup, 185 Milliliter)|
|Grated reduced-fat cheddar cheese||2 Ounce (1/2 Cup, 60 Gram)|
|Freshly ground black pepper||To Taste|
1. Brush a 23 cm/9 in flan dish with margarine. Line dish with bread, trimming slices to fit base and sides.
2. To make filling, arrange broccoli, sweet corn, mushrooms and red pepper in bread case. Place eggs and milk in a bowl and whisk to combine. Pour egg mixture over vegetables, sprinkle with cheese and black pepper to taste. Bake for 30-35 minutes or until filling is firm.
