Salmon Quiche

Ingredients
  Unbaked 9-inch pie shell 1
  Canned salmon 7 3⁄4 Ounce (1 Can)
  Salmon juice with milk/Salmon juice plus cream 1 1⁄4 Cup (20 tbs)
  Shredded gruyere cheese 3 Ounce
  Eggs 3
  Mayonnaise 1⁄3 Cup (5.33 tbs)
  Lemon juice 2 Teaspoon
  Salt 1⁄4 Teaspoon
  Cayenne 1 Dash
  Nutmeg 1 Dash
  Paprika 1⁄2 Teaspoon
Directions

Drain salmon juice into a measuring cup.
Add enough milk to make 1 1/4 cups.
Discard dark skin from salmon and flake.
Distribute salmon and shredded cheese in the unbaked pie shell.
Beat eggs, mayonnaise and lemon juice together and add salmon juice-milk mixture, salt, nutmeg and cayenne.
Pour over the salmon and cheese.
Sprinkle with paprika.
Bake at 450F for 15 minutes, then reduce heat to 325F and bake until set (about 35 minutes).
