Courgette Quiche

  Cooked pastry flan case 1 (8 inch size)
  Eggs 2 (size 2)
  Milk 1⁄4 Pint (150 milliliter)
  Single cream 1⁄4 Pint (150 milliliter)
  Cheddar cheese 2 Ounce, grated (50 gram)
  Courgettes 8 Ounce, thinly sliced (225 gram)

1. Lightly whisk together the eggs, milk and cream. Stir in the cheese and courgettes and season well with salt and pepper.
2. Place the pastry flan case on a large, flat ovenproof plate and carefully pour in the egg mixture.
3. Microwave the flan on MEDIUM for 18-19 minutes, giving the dish a quarter turn three times during cooking, until the filling is just beginning to set. Leave the quiche to stand for 10-15 minutes until completely set.
