Crustless Zucchini Quiche
|Grated zucchini||3 Cup (48 tbs), unpeeled, squeezed dry|
|Green onions||4 Small, chopped|
|Red bell pepper||1 , diced|
|Shredded cheese||3⁄4 Cup (12 tbs) (Cheddar Or Fontina)|
|Soft bread crumbs||1⁄2 Cup (8 tbs)|
1. In a large nonstick skillet, melt butter over medium-high heat. Add zucchini, green onions and red pepper; cook, stirring often, for 5 minutes or until softened. Let cool slightly.
2. In a large bowl, beat eggs; stir in zucchini mixture, cheese, bread crumbs, salt and pepper. Pour into pie plate. Bake for 35 to 40 minutes or until set in center.
