Delicate Onion Quiche
|Sliced onions||3 Cup (48 tbs)|
|All purpose flour||1 Tablespoon|
|Pepper||1 1⁄4 Teaspoon|
|Light cream||1 Cup (16 tbs)|
|Eggs||4 , slightly beaten|
|9 inch baked pastry shell||1|
In 12 X 7 1/2 X 2-inch baking dish, cook bacon, covered with paper toweling, at HIGH for 7 to 8 minutes or till crisp; set aside.
Reserve 1/4 cup drippings in baking dish.
Cook onions in reserved drippings at HIGH for 7 minutes or till tender, stirring 3 times.
Stir in flour, salt and pepper.
Cook at HIGH for 3 minutes or till thickened and bubbly, stirring well after each minute.
Gradually blend hot mixture into beaten eggs, stirring constantly; set aside.
Crumble bacon into pastry shell.
Pour onion mixture into pastry shell.
Sprinkle with nutmeg.
Cook at MEDIUM (5) for 13 minutes or till knife inserted off-center comes out clean, giving dish quarter turns every 4 minutes.
Let stand 10 minutes.
