Savory Egg Free Quiche

Dr. Ruby actually fires up the oven on this episode to make a super savory and delicious quiche with the usual suspects: eggs, cheese and milk. It is totally delicious!! Make a double batch because these don't last long!
Ingredients
  Cashews 2 Cup (32 tbs), soaked overnight
  Nutritional yeast 2 Tablespoon
  Garbanzo bean flour 1⁄2 Cup (8 tbs)
  Garlic 2 Clove (10 gm)
  Sea salt 1⁄2 Teaspoon
  Baking soda 1 Teaspoon
  Baking powder 1 Tablespoon
  Paprika 1⁄2 Teaspoon
  Cayenne 1⁄4 Teaspoon
  Sundried tomatoes 2 , chopped
  Water 3 Tablespoon
  Chopped onion 1⁄2 Cup (8 tbs)
  Chopped red bell peppers 1 Cup (16 tbs)
  Spinach 1 1⁄2 Cup (24 tbs)
  Cremini mushrooms 1 Cup (16 tbs), sliced
Directions

GETTING READY

1. Preheat the oven to 310 F. Grease the muffin tins with a bit of olive oil and set it aside.

MAKING

2. Blend together cashews, garbanzo bean flour, nutritional yeast, garlic, sea salt, baking soda, baking powder, paprika, cayenne, sundried tomatoes and water to a really smooth paste to Set it aside.

3. In a pan, saute onions, red bell pepper, mushroom and spinach and cook them down. Add sauce to the pan and fold it all in.

4. Scoop the mix into muffin moulds and bake it for 45 minutes.

SERVING

5. Serve the quiche with salad and enjoy.
