Lemony Tea Punch
|Tea leaves||2 Tablespoon|
|Boiling water||2 Pint (1.2 Liters)|
|Finely pared lemon rind||1 Large|
|Soft brown sugar||6 Ounce (175 Gram)|
|Dark rum||8 Fluid Ounce (250 Milliliter)|
|Brandy||8 Fluid Ounce (250 Milliliter)|
|Soda water||1 Pint (600 Milliliter)|
Place the tea leaves in a teapot or jug and pour over the boiling water.
Cover and leave to infuse for 5 minutes.
Put the lemon rind and sugar in a mixing bowl and crush them together with a wooden spoon or pestle to release the zest from the rind.
Pour the tea onto the sugar mixture and stir to dissolve the sugar.
Allow to cool.
Strain the tea mixture into a punch bowl.
Discard the lemon rind and tea leaves.
Stir the rum and brandy into the strained tea.
Serve chilled, adding the soda water, if used, just before serving.
Makes about 1.8 litres/3 pints
