3 tbsp (45 mL) loose black tea leaves
2 1/2 cups (625 mL) boiling water
Grated rind and juice of 3 oranges
Grated rind and juice of 3 lemons
1 cup (250 mL) sugar
1 cup (250 mL) water
1 cup (250 mL) fruit syrup or cordial
Pulp of 6 passion fruit
1 orange, thinly sliced
1 lemon, thinly sliced
1 lime, thinly sliced
32 oz (1 L) bottle ginger ale
32 oz (1 L) bottle soda water
Make tea with boiling water; infuse for 5 minutes then strain and cool.
Simmer grated orange and lemon rinds with sugar and water for 5 minutes.
Strain into tea.
Add cordial and passion fruit, then chill until needed.
Empty into punch bowl, add remaining ingredients and serve.
