Stewed Pumpkin

Ingredients
  Oranges 2
  Water 1 1⁄2 Pint
  Granulated sugar 1 1⁄2 Pound
  Cinnamon stick 3 Inch
  Pumpkin 2 Pound
Directions

GETTING READY
1. Start by washing the oranges, halve, squeeze out the juice, shred orange rind
2. Take the seeds and scrape it, also scrape the fibrous centre out of the pumpkin, remove the skin and cut into wide strips

MAKING
3. In a saucepan, add the water, sugar and cinnamon, and boil and simmer for about 30 minutes till the orange rind is tender
4. In the syrup, add the pumpkin strips with a few of the pumpkin seeds and boil it, simmer for about 30 minutes till the pumpkin is soft
5.Take out the pan from the heat and cool completely, transfer to a serving dish and chill for 3-4 hours

SERVING
6. Serve cold with pouring cream and crisp biscuits
