Grated Pumpkin Vegetable

Ingredients
  Red pumpkin 2 Cup (32 tbs), grated
  Oil 3 Tablespoon
  Chopped tomato 1 Large
  Finely minced onion 1 Medium
  Salt To Taste
  Garam masala powder 1⁄2 Teaspoon
For baghar
  Mustard seeds 1⁄2 Teaspoon
  Cumin seeds 1⁄2 Teaspoon
  Ginger 1⁄2 Inch, peeled and finely sliced
  Garlic flakes 6 , sliced
  Turmeric 1⁄4 Teaspoon
  Chopped mint 2 Tablespoon, mixed with 2 tablespoon chopped coriander to make 1 handful
  Chopped coriander 2 Tablespoon
  Curry leaves 6
  Red chilies 4 , halved
Directions

Heat oil, fry baghar and add onion, garlic, ginger and salt, cook till light brown, add in pumpkin, tomato, and turmeric.
Cover and cook on a slow fire till done.
Stir in garam masala, chopped mint and coriander leaves.
