Pumpkin Gratin

Ingredients
  Olive oil 3 Tablespoon
  Onion 1 Large, thinly sliced
  Pumpkin 2 Pound, cut into small chunks (Peeled, Seeded)
  Chopped fresh thyme 2 Teaspoon
  Grated parmesan cheese 1⁄4 Cup (4 tbs)
  Salt To Taste
  Pepper To Taste
Directions

Heat 2 tablespoons oil in a pan, add the onion and fry for about 10 minutes, until softened and lightly browned.
Meanwhile, parboil the pumpkin in salted water for 10 minutes.
Drain, reserving 3 tablespoons of the cooking liquid.
Mix the pumpkin with the reserved liquid, the thyme, remaining oil and seasoning.
Spread the onion over the bottom of a gratin dish.
Put the pumpkin on top.
Bake in a preheated 375° oven for 30 minutes.
Sprinkle with the Parmesan and bake for 15 minutes longer.
