Spiced Pumpkin Balls

  Pumpkin/Enough to yield 1 Medium
  Pumpkin balls 4 Cup (64 tbs)
  Sugar 3 Cup (48 tbs)
  Cider vinegar 1 1⁄2 Cup (24 tbs)
  Water 3⁄4 Cup (12 tbs)
  Spice 1 Tablespoon
  Lemon peel strip 2 , cut into julienne strips

Halve the pumpkin, remove the seeds, and with a 1 inch melon bailer scoop the pumpkin into balls.
Combine sugar, vinegar, water, spice bag, and lemon peel in a large heavy stainless steel or enameled saucepan.
Bring liquid to a boil and simmer 5 minutes.
Add the pumpkin balls and simmer for 10 minutes or until just tender.
Remove spice bag and transfer pumpkin balls to sterilized pint jars, covering completely with the syrup.
Seal and process in a simmering water bath for 10 minutes.
