Pasta with Ham and Black Eyed Peas
|Olive oil||1 Tablespoon|
|Garlic||1 Clove (5 gm), chopped fine (Medium Sized)|
|Onion||1 Small, chopped fine|
|Light style ham||3⁄4 Pound, cut into 1/2 inch chunks|
|Reduced chicken broth||1 1⁄2 Cup (24 tbs)|
|Canned black eyed peas||3⁄4 Cup (12 tbs), rinsed and drained|
|Finely chopped fresh chives||2 Tablespoon|
|Finely chopped italian parsley||1 Tablespoon (Fresh)|
|Pasta||1 Pound, cooked and drained|
In a large saucepan, heat the oil with the garlic and onion over moderate heat.
When they sizzle, add the ham and saute just until it begins to brown, about 5 minutes.
Add the broth and the black-eyed peas and simmer just until the peas are heated through, about 3 minutes more.
Stir in the chives and parsley and ladle over cooked pasta.
