Savory Black Eyed Peas
|Dried black eyed peas||2 Cup (32 tbs)|
|Cold water||4 Cup (64 tbs)|
|Fat salt pork||2 Ounce, sliced|
|White onions||4 Small, peeled|
Soak the peas in the cold water overnight.
In the morning, drain off the water; add to it enough more water to make 4 c liquid.
Add to the black-eyed peas with the salt, pepper, salt pork, and onions.
Then cover; bring to a boil, and let simmer for about 1 hr 10 min., or until peas are tender, adding more boiling water if necessary.
