Barley And Black Eyed Peas

Ingredients
  Reduced calorie margarine 1 Tablespoon
  Sliced carrot 1⁄2 Cup (8 tbs) (1/4 Inch Cubes)
  Green onions 1⁄4 Cup (4 tbs), sliced
  Low sodium chicken broth 1 Cup (16 tbs)
  Quick cooking barley 1⁄3 Cup (5.33 tbs)
  Snipped parsley 1 Tablespoon
  Salt 1⁄4 Teaspoon
  Pepper 1⁄8 Teaspoon
  Canned black eyed peas 16 Ounce, drained, rinsed
Directions

In 2-quart casserole, combine margarine, carrot and onions.
Cover.
Microwave at High for 3 to 6 minutes, or until tender, stirring after half the time.
Add remaining ingredients, except black-eyed peas.
Mix well.
Re-cover.
Microwave at High for 13 to 15 minutes longer, or until liquid is absorbed and the barley is tender.
Stir in black-eyed peas.
Re-cover.
Microwave at High for 2 minutes, or until heated through.
