Barley and Black Eyed Peas
|Reduced calorie margarine||1 Tablespoon|
|Sliced carrot||1⁄2 Cup (8 tbs) (1/4 Inch Cubes)|
|Green onions||1⁄4 Cup (4 tbs), sliced|
|Low sodium chicken broth||1 Cup (16 tbs)|
|Quick cooking barley||1⁄3 Cup (5.33 tbs)|
|Snipped parsley||1 Tablespoon|
|Canned black eyed peas||16 Ounce, drained, rinsed|
In 2-quart casserole, combine margarine, carrot and onions.
Microwave at High for 3 to 6 minutes, or until tender, stirring after half the time.
Add remaining ingredients, except black-eyed peas.
Microwave at High for 13 to 15 minutes longer, or until liquid is absorbed and the barley is tender.
Stir in black-eyed peas.
Microwave at High for 2 minutes, or until heated through.
