Black Eyed Peas And Rice
|Dried black-eyed peas||1 Cup (16 tbs)|
|Water||1 Cup (16 tbs)|
|Salt pork/Bacon||1⁄4 Pound, diced|
|Dried red-pepper pod||1 , crushed|
|Cooked rice||3 Cup (48 tbs)|
1. Soak black-eyed peas overnight in water to cover, or add water to cover and bring to boiling. Remove from heat; let stand 1 hour.
2. Add salt pork or bacon, pepper pod and additional water to cover black-eyed peas, if necessary. Bring to boil; simmer 35 minutes, or till peas are very tender.
3. Stir in the rice, salt and pepper. Turn into a greased, 10-cup casserole. Cover.
4. Bake in moderate oven (350°) for 20 minutes, or until liquid is absorbed.
