Fresh Black Eyed Peas
|Fresh shelled peas||4 Cup (64 tbs)|
|Water||1⁄4 Cup (4 tbs)|
|Bacon drippings||2 Tablespoon|
Combine all ingredients in a 2-quart casserole.
Cover with plastic wrap.
Microwave at HIGH 2 to 4 minutes.
Microwave, covered, at MEDIUM 12 to 16 minutes.
Stir well 2 or 3 times and add small amount of water during cooking, if necessary.
Let stand, covered, 5 minutes before serving.
