Pour 1/4 inch of oil into an 8- to 10-inch frying pan.
Place over medium-high heat until oil is very warm.
Add peas, immediately cover pan, and fry, shaking pan often, until peas are golden, 9 to 12 minutes (lift lid to check carefully; peas spatter).
Remove pan from heat; let stand, covered, until any popping stops, about 1 minute.
With slotted spoon, lift hot peas to paper towels to drain.
Add salt to taste.
