New Year's Day Black Eyed Peas
|Dried black eyed peas||1⁄2 Pound, sorted and rinsed|
|Water||4 Cup (64 tbs)|
|Extra virgin olive oil||1⁄3 Cup (5.33 tbs)|
|Onion||1 Small, chopped|
|Wine vinegar||2 Tablespoon|
|Garlic||1 Clove (5 gm), minced|
|Bay leaf||1 Large|
|Dried thyme leaves||1⁄8 Teaspoon, crushed|
Place peas and water in medium saucepan; bring to a boil over high heat.
Reduce heat; stir in olive oil, onion, vinegar, garlic, pepper, bay leaf and thyme.
Cover; simmer 1 hour or until peas are tender.
Drain peas; remove and discard bay leaf
