Cream Puff

Cream Puffs, also known as ‘Profitelore’ in France, are basically a choux pastry/puff pastry that is usually made with a filling of whipped cream or pastry cream. In US and France, even ice cream is used as a filling and the puffs are also made in different shapes like swans, which are garnished with chocolate sauce, glazed caramel or powdered sugar. Though this dish is made with cream pastry in the US, the same is made with puff pastry in the UK, where cream puff recipe is quite popular. Weddings and Christmas holidays are the time when everyone enjoys Cream Puffs.

 

History of Cream Puff Recipe

Cream Puffs have an unclear history; however, there is a strong inclination towards France being the place of birth of the cream puff recipe. Even Japan is considered one of the countries to have introduced this dessert around the 16th century, influenced by the French recipe. Though there is no clear reference to what the word Profiterolle means, it was understood to be a type of roll that is baked under the ashes. Early records also mention a soup made of dried small breads that are simmered in almond broth and garnished with cockscombs, truffles, etc. called Profiterole. It was around the 1851 that US restaurants introduced Cream Puffs.

 

Preparation of Cream Puffs

Cream Puffs are made with pastry dough that is cooked first. Flour is sifted with powdered sugar and a pinch of salt and set aside. Water and butter are mixed in a proportion of 2:1 and boiled. After taking off the stove, the dry ingredients of flour, sugar and salt and stirred into the boiled water/butter mixture and made into nice thick dough, which is mixed well till it pulls away from the sides of the saucepan. To this dough, beaten eggs are added and stirred in well, till the choux turns into a thick paste. Blobs of the choux are placed on a parchment paper lined baking sheet and baked for 15 minutes at about 400 degrees F and for another 30 minutes at a reduced temperature of 350 degrees F to have nice golden colored Cream Puffs.

Cream Puffs are quite popular and some popular cream puff recipes are –

 

  • Caramel Apple Cream Puff Dessert – This cream puff recipe consists of the same pastry base like choux pastry. The filling that goes into this dessert is a mixture of cubed apples, sugar, brown sugar, butter and heavy cream. Packaged vanilla pudding, milk, cream cheese, milk and cinnamon are mixed to make a creamy layer. Finally, the pastry has a delicious topping that is made with caramel ice cream topping, whipped dairy topping and sliced pecans, all mixed together. This recipe results in some delicious Cream Puffs.
  • Chocolate Cream Puff – This is another popular cream puff recipe that is made with same pastry dough as any other cream puff. Once the puffs are baked, they are cooled and the tops are sliced. Chocolate sauce is prepared by melting chocolate in a double boiler and cooling it. Cream is then whipped and beaten to stiff peaks to which the melted chocolate is added and mixed well. This chocolate mixture is scooped on top of the sliced puffs and the tops placed back. These Cream Puffs are served immediately.
