Cream Puff Or Choux Paste
|Hot water||1 Cup (16 tbs)|
|Butter||1⁄2 Cup (8 tbs)|
|All purpose flour||1 Cup (16 tbs)|
Put hot water, butter, sugar, and salt into a saucepan and bring to a rolling boil.
Add the flour all at one time.
Beat vigorously with a wooden spoon until mixture leaves sides of pan and forms a smooth ball.
Remove from heat.
Add eggs, one at a time, beating until smooth after each addition.
Continue beating until mixture is thick and smooth.
Dough may be shaped and baked at once, or wrapped in waxed paper and stored in refrigerator overnight.
