|All purpose flour||1 Cup (16 tbs)|
|Shredded sharp processed cheese||1 1⁄2 Cup (24 tbs)|
|Gruyere cheese||6 Ounce (or swiss cheese)|
Generously grease an 8-inch round baking dish with butter.
In medium saucepan combine milk, butter, salt, nutmeg, and pepper; bring to boiling.
Add flour all at once; cook and stir vigorously till mixture forms a ball that doesn't separate.
Remove from heat.
Cool 5 minutes.
Add eggs, one at a time, beating vigorously by hand after each addition till smooth.
Stir 1 1/4 cups of the shredded cheese into the egg mixture.
Turn dough into prepared baking dish.
Sprinkle with remaining cheese.
Bake in 400Â° oven for 40 to 45 minutes.
