Shrimp Puffs

Ingredients
  Shrimps 1 Pound, cleaned, deveined chopped very fine
  Water chestnuts 9 , minced
  Egg 1 , beaten
  Salt 1 Teaspoon
  Sugar 1⁄2 Teaspoon
  Cornstarch 1 Teaspoon
  Dry sherry 2 Teaspoon
  Soy sauce 1 Teaspoon
  Frying oil 2 Cup (32 tbs) (For Frying)
  Lemon wedges 5
  Soy sauce 2 Cup (32 tbs)
Directions

Combine the shrimps, water chestnuts, egg, salt, sugar, cornstarch, sherry, and soy sauce.
Heat oil in the wok to 375°F.
Shape the shrimp mixture into balls the size of small walnuts and drop from a spoon into the .hot oil.
Fry until the balls float and turn pink and golden.
Drain on paper towels.
Serve hot with lemon wedges and a.bowl of soy sauce for dipping.
