Shrimp Puffs

Ingredients
  Puff pastry sheet 1 (frozen)
  Bay shrimp 1⁄4 Pound, cooked
  Ricotta cheese 4 Ounce
  Egg 1 , slightly beaten
  Lemon juice 2 Teaspoon
  Green onion 1 , finely chopped
  Cheddar cheese 1⁄2 Cup (8 tbs), shredded
Directions

GETTING READY
1. Preheat the oven to 450° F
2. Defrost pastry

MAKING
3. Mix or combine ricotta cheese, egg, lemon juice, green onion and cheese
4. Roll pastry sheet to a 1 2 "x 1 2 " square, using a small amount of flour if necessary to prevent sticking
5. Cut into 2" squares and top each square with a teaspoon of filling
6. Brush two edges of each square with milk, and fold to make a triangle.Press edges together
7. Place on an ungreased baking sheet and chill until ready to bake
8. Place pan in oven, reduce heat to 400° F, and bake 12-15 minutes until light golden brown

SERVING
9. Can be served with a sauce of your choice
