Nutty Sweet Potato Puffs

Ingredients
  Sweet potatoes 3 Cup (48 tbs), boiled / baked and mashed
  Margarine 1⁄4 Cup (4 tbs)
  Honey/Brown sugar 3 Tablespoon
  Lemon juice 1 Tablespoon
  Grated lemon peel 1 Teaspoon
  Bourbon 2 Tablespoon
  Salt 1⁄2 Teaspoon
  Unsweetened rhubarb sauce 1⁄2 Cup (8 tbs), drained
  Pineapple chunks 12
  Finely chopped peanuts/Walnuts / pecans 1 Cup (16 tbs)
Directions

Mash potatoes with margarine and honey.
Blend in lemon juice and peel, bourbon, salt, and rhubarb sauce.
Form into 12 small rolls or balls, enclosing a pineapple chunk in center of each.
Roll each ball in nuts.
Place on greased baking sheet.
Bake for 15 minutes at 350°.
Excellent with ham or turkey, and can be frozen.
