|Butter||1⁄2 Cup (8 tbs)|
|Boiling water||1 Cup (16 tbs)|
|All purpose flour||1 Cup (16 tbs), sifted|
|Fat||1 Tablespoon (For Frying)|
|Confectioner sugar||1 Tablespoon|
1)In a saucepan, melt butter and add boiling water.
2)Add flour and salt all at once.
3)Cook the mixture on medium heat until mixture leaves sides of pan and is smooth and compact, about 2 minutes. Keep stirring.
4)Remove from heat and cool about 1 minute.
5)Add eggs, one at a time, beat vigorously after each addition until mixture is smooth and glossy.
6)Then, add vanilla.
7)In a pan, heat fat and drop batter and fry for 4 to 6 minutes, or until golden brown. Drain.
8)Sprinkle confectioners' sugar and serve hot or cold.
Be sure to leave them in the hot fat long enough to puff up just like cream puffs baked in the oven.
Miniature puffs may also be split open and filled as desired.
