Sweet Potato Puffs
|Cooked sweet potatoes||2 Cup (32 tbs)|
|Egg white||1 , stiffly beaten|
|Oil/Melted butter||2 Tablespoon|
1. Using a food processor blend the sweet potatoes, banana, egg yolk, salt and cream until smooth or blender.
2. Into a bowl pour and fold in the egg white with a metal spoon.
3. Onto a greased baking sheet add spoonfuls of the mixture and let it bake in a preheated 500 F/250 C oven for 6-8 minutes.
4. Serve sprinkled with a little sugar and grated nutmeg.
