Sweet Potato Puffs
|Mashed sweet potatoes||2 Cup (32 tbs) (Cold)|
|Sugar||1⁄2 Cup (8 tbs)|
|Rice flakes/Cornflakes||2 Cup (32 tbs)|
To the mashed sweet potatoes, add egg yolks, salt, sugar, 2 tablespoons of butter and allspice.
Mix and divide into 6 portions.
Flatten each portion as in making potato cakes.
Place 1 marshmallow in center of each and pull potatoes up and over them in a ball.
Crush rice flakes with rolling pin and add them to the rest of the butter.
Roll balls in buttered flakes.
Place on buttered cookie sheet and bake in hot oven at 400 degrees for 10 minutes, or until very warm.
Nice buffet dish.
