Puff Topped Pork
|Frozen cut green beans||9 Ounce (1 Package)|
|Onion||1 Medium, chopped to make 1/2 cup|
|Carrot||1 , shredded to make 1/2 cup|
|Butter/Margarine||1⁄4 Cup (4 tbs)|
|Dried thyme||1⁄2 Teaspoon, crushed|
|Chicken broth||1 Cup (16 tbs)|
|Cubed cooked pork||2 Cup (32 tbs)|
|Shredded american cheese||2 Ounce (1/2 Cup)|
|Sliced mushrooms||2 1⁄2 Ounce, drained (1 Jar)|
|All purpose flour||1⁄2 Cup (8 tbs)|
|Grated parmesan cheese||2 Tablespoon|
|Baking powder||1 Teaspoon|
|Milk||1⁄2 Cup (8 tbs)|
|Cooking oil||1 Tablespoon|
|Snipped parsley||2 Tablespoon|
Thaw green beans then set aside.
In a 2-quart casserole micro-cook onion, carrot, and butter or margarine, covered, on 100% power (HIGH) 2 to 3 minutes or till onion is tender.
Stir in flour, thyme, and pepper.
Stir in milk and chicken broth all at once.
Micro-cook, uncovered, on 100% power (HIGH) 5 to 7 minutes or till thickened and bubbly, stirring every minute.
Stir in green beans, pork, cheese, and mushrooms.
Micro-cook, covered, on 100% power (HIGH) 8 to 10 minutes or till beans are crisp-tender, stirring once.
Keep covered and set aside.
For topper, in a small mixer bowl beat egg yolks on high speed of an electric mixer about 5 minutes or till thick and lemon colored.
In a small bowl stir together flour, cheese, and baking powder.
Combine milk and oil.
Stir flour mixture and milk mixture alternately into beaten egg yolks.
Stir in parsley.
Wash the beaters.
In a large mixer bowl beat egg whites till stiff peaks form.
Fold yolk mixture into egg whites.
Carefully spoon atop pork mixture, then sprinkle with paprika.
Micro-cook, uncovered, on 50% power (MEDIUM) 8 to 10 minutes or till topper is done, rotating the dish a half-turn once.
Let stand 5 minutes before serving.
