Quick Lemon Puffs
|Frozen puff pastry||13 Ounce (370 Gram, 1 Package)|
|Lemon curd||120 Milliliter (8 Tablespoon)|
|Whipping cream||5 Fluid Ounce (2/3 Cup/150 Milliliter)|
|Icing sugar||1⁄2 Cup (8 tbs) (Confectioners, For Dusting)|
Defrost the pastry at room temperature.
Sprinkle a board with icing (confectioners') sugar and roll out the pastry as thinly as possible. Cut into 10 - cm / 4 - in squares.
Preheat a microwave griddle for 4 minutes. Place three squares of pastry at a time on the griddle and cook for approx 5 - 7 minutes, turning once. The pastry is ready when it no longer deflates when the oven door is opened.
Slice horizontally through the puffs and spread the bottom layer with lemon curd and whipped cream. Replace the top layer of pastry and dust with icing sugar.
