Cream butter and sugar thoroughly.
Stir in egg yolk and extracts.
Add flour gradually, 1/4 cup at a time.
Stir in candy.
Roll into 1 -inch balls.
Dip balls into egg white and roll in sugar.
Place a chocolate morsel in the center of each cookie.
Bake on ungreased cookie sheets at 350° for 15 minutes.
Remove from cookie sheets immediately: place on wire racks to cool.
