Fruited Sausage Puffs
|Link sausage||1 Pound|
|Yams||2 Can (20 oz), drained|
|Melted butter||1⁄4 Cup (4 tbs)|
|Canned apple sauce||2 Cup (32 tbs)|
|Pineapple tidbits||1 Can (10 oz), drained|
|Grated lemon rind||1 Teaspoon|
|Maple syrup||1⁄3 Cup (5.33 tbs)|
|Egg whites||3 , stiffly beaten|
|Sliced blanched almonds||1⁄2 Cup (8 tbs)|
Cook sausages until lightly browned.
Drain and reserve.
Mash yams and beat in butter, apple sauce, and egg yolks, mixing until well blended.
Fold in pineapple, lemon rind, nutmeg and maple syrup.
Fold in egg whites and pile mixture lightly into a buttered 1 1/2-quart casserole.
Place sausages on top of casserole to form spokes.
Bake in a 350° F oven 25 to 30 minutes or until potatoes are lightly browned.
Sprinkle with almonds 5 minutes before removing from oven
