Puff Paste Twists

These Puff Paste Strips taste awesome ! Try these fried sweet brandied strips for your next dessert. Your suggestions for these Puff Paste Strips are welcome !
  Egg yolks 4
  Confectionery sugar 3 Ounce
  Salt 1⁄2 Teaspoon
  Brandy 2 Tablespoon
  Finely grated lemon rind 1 Tablespoon
  Flour 1 Cup (16 tbs)
  Melted butter 2 Ounce
  Vegetable oil 1 Quart (For Frying)

1. Mix egg yolks, sugar, brandy, and lemon rind. Add the flour and work together. Leave it in a cold place to set.
2. Roll out the flour and trim out strips about 1/2 inch wide and 4 inches long.
3. Make a slit along part of the middle of each strip and pull one end of it through the strip. Place a few twists at a time in the heated (300°F) fat and fry them until golden brown, about 1 1/2-2 minutes. Let them drain on paper towel. Sprinkle with confectioners' sugar just before serving.
