Spiced Peach Puffs
|Milk||1 Cup (16 tbs)|
|Lemon||1⁄2 (Use Thin Outer Peel)|
|Sifted all purpose flour||1 Cup (16 tbs)|
|Heavy cream||1 1⁄2 Cup (24 tbs)|
Set 9-inch pie pans with 1/2 tablespoons butter in oven while oven is preheating.
Put eggs, milk, and lemon peel into an electric blender container.
Cover and blend at high speed until thoroughly combined and lemon peel is finely chopped.
Add flour, sugar, and salt.
Blend at high speed until smooth; scrape down sides of blender container if necessary.
Pour half of batter into each pie pan with melted butter.
Bake at 400°F 20 to 22 minutes, or until puffed and golden.
Whip cream until soft peaks are formed.
Beat in confectioners' sugar and spices.
Put half of peaches in center of each pancake.
Sprinkle with confectioners' sugar.
