The carrot pudding is a flavorful pudding prepared with raisin and currants along with suet and grated carrots. Mixed together with pastry flour and spices, this carrot pudding is steamed and served fresh.
|Grated carrots||1 Cup (16 tbs)|
|Brown sugar||1 Cup (16 tbs)|
|Chopped suet||1 Cup (16 tbs)|
|Raisins/Currants||1 Cup (16 tbs)|
|Sifted pastry flour||1 1⁄2 Cup (24 tbs)|
Mix together carrots, sugar, suet and raisins, then add flour, soda, spice and salt sifted together.
(The mixture will be dry, but do not dampen, as carrots supply moisture).
Steam 3 hours in bag or bowl.
