Light and tender, one of the easiest puddings to make â€” always a favorite.
1⁄4 Cup (4 tbs)
Self rising flour
1 Cup (16 tbs)
Jam/Raspberry, apricot, plum, marmalade
Cream butter with sugar. Beat in egg and vanilla, then fold in sifted flour and milk. Place jam in a 4-5 cup pudding basin or 4 greased individual moulds and spoon in mixture. Cover with 2 layers of greaseproof paper and steam for 25 minutes. Serve with custard or cream. Serves 4.
