Georgia Christmas Pudding
|Chopped walnuts/Pecans||1⁄2 Cup (8 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Chopped raisins||1⁄2 Cup (8 tbs)|
|Sherry wine||1⁄2 Cup (8 tbs)|
|Rum||1⁄4 Cup (4 tbs)|
|Lemon juice||1 Teaspoon|
Soak the nuts and raisins in the wines and lemon juice for at least six hours overnight if possible.
Beat the egg whites stiff, add the sugar and beat till ropy.
Fold in the wine-soaked fruits and nuts.
Pour into a buttered baking dish.
Set in a pan of hot water.
Bake at 350Â° F.for one hour.
