Upside-down Date Pudding
|Pitted dates||1 Cup (16 tbs), cut up|
|Boiling water||1 Cup (16 tbs)|
|Granulated sugar||1⁄2 Cup (8 tbs)|
|Brown sugar||1⁄2 Cup (8 tbs)|
|Butter/Margarine||2 Tablespoon, melted|
|Sifted enriched flour||1 1⁄2 Cup (24 tbs)|
|Baking powder||1⁄2 Teaspoon|
|California walnuts||1 Cup (16 tbs)|
|Brown sugar sauce||1 Cup (16 tbs)|
Combine dates and water.
Blend sugars, egg, and butter.
Sift together flour, soda, baking powder, and salt; add to sugar mixture.
Stir in nuts and cooled date mixture.
Pour into 11x7x1 1/2 inch baking dish.
Top with Brown sugar Sauce: Combine 1 1/2 cups brown sugar, 1 tablespoon butter or margarine, and 1 1/2 cups boiling water.
Bake in moderate oven (375Â°) about 40 minutes.
Cut in squares; invert on plates.
Serve warm with whipped cream.
