Slow-Cooked Old Fashioned Rice Pudding

|Rice||1⁄4 Cup (4 tbs)|
|Milk||4 Cup (64 tbs)|
|Sugar||1⁄3 Cup (5.33 tbs)|
|Lemon rind||1 , grated|
Wash rice, mix with the other ingredients and pour into a buttered pudding dish.
Bake 3 hours in a very slow oven (250Â° F ) stirring three times during the first hour of baking to prevent the rice from settling.
