Lets be honest who doesnt get an Italian panettone for Christmas from someone and then have no clue what to do with it so you just let it sit in your pantry until February. Im definitely guilty. Well take that panettone out of the dark side of your pantry because I have a recipe that will knock your holiday socks off! Its very easy to prepare and you wont even believe you were going to let that beautiful panettone go to waste.

Butter | 1 Teaspoon | |
Egg yolks | 8 Large | |
Eggs | 3 Large | |
Sugar | 1/2 Cup (8 tbs) | |
Milk | 5 Cup (80 tbs) | |
Salt | 1 Pinch | |
Vanilla | 2 Teaspoon | |
Almond extract | 1/2 Teaspoon | |
For rum hard sauce | ||
Butter | 2 Tablespoon | |
Powdered sugar | 1 1/2 Cup (24 tbs) | |
Rum/Bourbon | 2 Tablespoon | |
Vanilla | 1 Teaspoon | |
Sliced almonds | 1/4 Cup (4 tbs) (Optional) |
GETTING READY
1. Preheat oven at 350*F.
2. Using a sharp bread knife, trim the brown crust off the panettone and cut it in 1 “ cubes.
3. Rub the sides and bottom of baking dish with butter to grease it.
MAKING
4. In a foil lined baking sheet, put the panettone cubes and toast it for about 10 minutes.
5. In the greased baking dish, transfer the toasted bread cubes.
6. In a mixing bowl, put together egg yolks, eggs, sugar, salt, milk, almond extract and vanilla, and whisk well to mix.
7. Stream the milk mixture all over the bread cubes and allow to sit for 10 minutes
8. Sprinkle sliced almonds all over the top.
9. Cover the top of baking dish with aluminium foil, bake in the oven for 40 minutes.
10. Remove the foil and allow to bake for 40 minutes more.
FINALIZING
11. Remove and allow to cool for 10 minutes.
For rum hard sauce
12. In a mixing bowl, beat the soften butter until it is fluffy, with an electric beater.
13. Add in powdered sugar and mix well.
14. Stream in the rum and vanilla, and whisk it well until combined.
SERVING
15. Cut and serve the pudding with a dollop of rum hard sauce.
