Steamed Christmas Pudding
|Mix well in a large bowl:|
|Whole wheat flour||1 1⁄2 Cup (24 tbs)|
|Baking powder||3 1⁄2 Teaspoon|
|Chopped dates/Figs||1 Cup (16 tbs)|
|Chopped walnuts||1 Cup (16 tbs)|
|Mix in a blender until smooth:|
|Honey||1⁄2 Cup (8 tbs)|
|Light molasses||1⁄2 Cup (8 tbs)|
Pour the blended ingredients into the flour mixture. Mix well. Turn into a buttered 5 pound honey can. Fill 3/4 full. Cover the can with aluminum foil and tie, tape, or rubber band securely in place.
Place the can on a rack (or a vegetable steamer) in a deep pot. Add enough boiling water to come half way up the sides of the can. Cover the pot.
Steam for 2 hours. (The water should continue to boil gently throughout the steaming process. Add more water if it gets low.) Cool for 10 minutes. Remove from the can. Serve hot or cold.
