Orange Meringue Bread Pudding
|Butter||1⁄3 Cup (5.33 tbs)|
|Sugar||1 1⁄4 Cup (20 tbs)|
|Eggs||2 , separated|
|Orange juice||1⁄4 Cup (4 tbs)|
|Orange rind||1 1⁄2 Teaspoon, grated|
|Soft bread crumbs||2 Cup (32 tbs)|
Cream butter and 1 cup sugar; beat in egg yolks.
Add 1/2 cup water, orange juice and rind; mix well.
Com- bine bread with egg mixture.
Bake in a 1 1/2-quart greased casserole at 350 degrees for 30 to 35 min- utes.
Beat egg whites until soft peaks form; add re- maining sugar gradually.
Beat until egg whites are glossy; spread meringue over pudding.
Bake for 5 to 10 minutes longer or until lightly browned.
