Rice Festival Pudding

Ingredients
  Long grain rice 1⁄2 Cup (8 tbs)
  Water 1 Cup (16 tbs)
  Salt 1⁄2 Teaspoon
  Milk 1 Quart
  Butter 1⁄2 Stick
  Eggs 3
  Granulated sugar 1⁄2 Cup (8 tbs)
  Seedless raisins 1 Cup (16 tbs)
  Vanilla 1⁄2 Teaspoon
Directions

MAKING
1. In a saucepan, boil water, add rice, salt and simmer for 30 minutes, until water is absorbed.
2. Add milk, butter and bring to a boil again. Turn heat to very low and when milk has ceased boiling, add eggs, sugar, raisins, vanilla and mix well

FINALISING
4. Allow the pudding to stand 10 minutes. Transfer pudding to serving bowl. If not serving right away, press sheet of plastic wrap onto pudding and refrigerate up to 2 days.

SERVING
5. Spoon pudding into dessert bowls and sprinkle with toasted coconut.
