Easy Grape Nuts Cherry Pudding
|Quick cooking tapioca||2 Tablespoon|
|Skim milk||2 Cup (32 tbs)|
|Almond extract||1⁄2 Teaspoon|
|Fresh sweet cherries||1 Cup (16 tbs), pitted, chopped, divided|
|Grape nuts cereal||4 Teaspoon, divided|
|Fresh sweet cherries||4 , pitted|
1 In a medium-size saucepan, add tapioca, honey, egg yolk, and skim milk.
2 Keep aside for 5 minutes and allow tapioca to soften.
3 Bring the mixture to a boil and cook over medium heat for 6 to 8 minutes, stirring constantly.
4 Remove from the heat and blend in the extract.
5 Allow to cool for 20 to 30 minutes.
6 Among 4 dessert dishes, equally divide half the pudding
7 Sprinkle each serving with 1/4 cup of the chopped cherries.
8 Among the 4 dishes, divide the remaining pudding spreading over the cherries.
9 Over each portion, sprinkle 1 teaspoon of the grape-nuts and top with a whole cherry;serve.
