Easy Strawberry Rice Pudding

Ingredients
  Water 2 1⁄2 Cup (40 tbs)
  Brown rice 1 Cup (16 tbs)
  Eggs 2
  Honey 2 Tablespoon
  Skim milk 1 1⁄2 Cup (24 tbs)
  Vanilla extract 1 Teaspoon
  Strawberry 1⁄2 Teaspoon, extract
  Fresh strawberries 1 Cup (16 tbs)
Directions

MAKING
1 In a large saucepan, heat water.
2 Add in and rice and bring to a boil.
3 Lower the heat, cover, and simmer for about 40 to 45 minutes until the rice is soft.
4 In a medium-size bowl, beat eggs and honey together.
5 Blend in skim milk.
6 Combine with rice and continue cooking, for about 15 minutes, stirring constantly, until the mixture thickens.
7 Remove from the heat.
8 Stir in extracts and strawberries.

SERVING
9 Serve warm or cold.
