Rich Fig Pudding
|Eggs||7 Small, separated|
|Sugar||1 Cup (16 tbs)|
|Bread crumbs||3⁄4 Pound|
|Dried figs||1⁄2 Pound, chopped|
|Butter||1⁄2 Cup (8 tbs), melted|
Beat egg yolks until light, beating in sugar gradually.
Beat egg whites until stiff; fold into egg yolk mix- ture.
Add bread crumbs, figs, butter, allspice, vanilla and brandy; mix lightly.
Turn into greased 2-quart mold; cover.
Steam for about 4 hours.
Serve with hard sauce.
