Pineapple Orange Pudding
|Unflavored gelatin||1 Tablespoon (1 Envelope)|
|Unsweetened orange juice||1⁄2 Cup (8 tbs)|
|Canned crushed unsweetened pineapple||1 Can (10 oz)|
|Granulated sugar||2 Tablespoon|
|Lemon juice||1 Tablespoon|
|Plain low fat yogurt||1 Cup (16 tbs)|
In a small saucepan, sprinkle gelatin over orange juice and let stand to soften; then cook over low heat, stirring constantly until gelatin is completely dissolved.
In a medium-sized bowl combine pineapple (in juice), sugar and lemon juice.
Add gelatin mixture and stir to combine.
Cover and refrigerate until almost set.
Using a wire, beat in yogurt until mixture is thoroughly blended.
Spoon into 4 dessert dishes and cover with plastic wrap.
Refrigerate until set, about 3 hours.
