Cherry Cottage Pudding
|Sugar||3⁄4 Cup (12 tbs)|
|Shortening||1⁄4 Cup (4 tbs)|
|Flour||1 1⁄2 Cup (24 tbs)|
|Baking powder||2 Teaspoon|
|Milk||1⁄2 Cup (8 tbs)|
|Sour pitted cherries||2 1⁄2 Cup (40 tbs)|
|Almond extract||1⁄2 Teaspoon|
|Chopped walnuts||1⁄2 Cup (8 tbs)|
Cream sugar and shortening until fluffy.
Beat in egg.
Sift flour, baking powder and salt together; add to creamed mixture alternately with milk.
Fold in cherries, almond extract and walnuts; pour into greased 8-inch square pan.
Bake at 375 degrees for 45 minutes.
Cut into squares; serve with Cherry Sauce.
