Christmas Carrot Pudding

Ingredients
  Flour 125 Milliliter
  Salt 5 Milliliter
  Baking soda 2 Milliliter
  Cinnamon 5 Milliliter
  Allspice 2 Milliliter
  Nutmeg 2 Milliliter
  Mace 1 Milliliter
  Mixed fruit 175 Milliliter, cut
  Almonds 50 Milliliter, slivered
  Carrot 250 Milliliter, grated
  Potato 250 Milliliter, grated
  Currants and raisins 300 Milliliter (Combined)
  Brown sugar 250 Milliliter
  Suet 175 Milliliter, ground
  Milk 25 Milliliter
Directions

MAKING
1) In a bowl, first sift the dry ingredients together. Put in the remaining ingredients, knead well.
2) Take pudding moulds, grease with solid shortening.
3) Add the mixture into the moulds almost upto the brim. Cover with plastic wrap.
4) Microwave at MEDIUM power till the time mentioned below.
- For full 1.5 L (6 cups) ring mould - 11 to 14 minutes.
- For half 675 mL (2 1/2 cups) mould - 5 to 7 minutes.
- For individual 175 mL (3/4 cup) custard cup - 1 to 1 1/2 minutes.
5) Let it stand for 10 minutes and unmould.

SERVING
6) Serve warm on nice plate, with caramel or golden sauce poured over it.

NOTE
You can store them wrapped in plastic wrap and store in an air tight container in a cool place or freeze.
Reheat at MEDIUM for half of the cooking time, with wrapped plastic and put on a plate.
